The Splendid Table's First Ever Blind Chocolate Candy Tasting

As a public service, we decided to taste-test for chocolates that would be worthy of gift-giving. We picked chocolatiers from across the country and asked each to send up samples of their three most outstanding creations.

Eleven chocolatiers responded, which means we sampled 33 different filled candies. And we did it blind—as in blindfolded. Pure taste was what we were after.

Tasting comments ranged from, "Tastes like Lemon Pledge" to "Wow, I want more," from "The bomb!" to "An insult to human life." Sadly, all the hazelnut chocolates tasted of stale nuts. And interestingly, the topping-chocolates-with-coarse-salt trend that started five years ago is going strong, with good results. I was surprised at how many salted caramels got us raving.

We came up with a handful of outstanding gift possibilities. These are our picks:

  • Fran's in Seattle: "Gray Salt Caramels." These are little bars of caramel dipped in dark chocolate and topped with crystals of salt. Sweet, salt, sticky, smooth - truly stunning.


  • Ethel's in Chicago: Two choices: A chocolate filled with a cream of peanut butter and jelly that tastes like afternoons after school, really fine, and a white chocolate filled with pumpkin pie, which tasted to me like hot chili and spice.


  • Valerie's Confections in California: There was a salt-and-pepper truffle I am stashing away, and chocolate-covered almond toffee crunch topped with fleur de sel that was like a sophisticated Heath Bar. I quote: "The bomb."


  • Brian T. McElrath in Minneapolis: A white and dark chocolate shell filled with tart, fresh-tasting passion fruit cream was another stunner. And his butterfly-shaped, salted caramel-filled chocolate was up there with the best.
